10 Minute Easy Egg Fried Rice

A quick and simple egg fried rice recipe that can be made in just 10 minutes, perfect for busy weeknights.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 12 tablespoons vegetable oil

Instructions

  1. Heat 1-2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat until it shimmers.
  2. Add 2 cups of cooked rice, breaking up any clumps with a spatula. Stir-fry for 1-2 minutes until heated through.
  3. Push the rice to one side of the skillet and crack 2 eggs into the empty space. Scramble the eggs until just set.
  4. Fold the scrambled eggs into the rice until well combined.
  5. Pour in 2 tablespoons of soy sauce and 1 tablespoon of sesame oil over the rice. Stir well to coat evenly.
  6. Add 2 chopped green onions, mix well, and serve immediately.

Notes

Use cold, day-old rice for the best results. Feel free to customize with your favorite vegetables or proteins.
