A quick and delicious chicken parmesan recipe that’s ready in just 15 minutes, combining crispy chicken with melty cheese and rich tomato sauce.

  • 2 cups flour
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 1.5 cups freshly grated Parmesan cheese
  • 6 boneless, skinless chicken breast halves
  • 3 tbsp olive oil
  • 2 cups chicken broth
  • 1 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Begin by placing the flour in a small bowl.
  2. Lightly beat the eggs in another bowl.
  3. Combine the panko breadcrumbs and grated Parmesan cheese in a third bowl.
  4. Pound the chicken breasts between sheets of wax paper until they are 1/2 inch thick.
  5. Coat each chicken piece in flour, shaking off any excess.
  6. Dip the chicken in the beaten eggs, allowing the excess to drip off.
  7. Press the chicken into the panko mixture to coat both sides thoroughly.
  8. Heat olive oil in a large skillet over medium-high heat. Sauté the chicken until it is lightly browned, about 3 minutes per side.
  9. Reduce the heat to low. Pour in the chicken broth and spread 3 tablespoons of tomato sauce on each chicken breast.
  10. Top each piece with mozzarella cheese and additional grated Parmesan.
  11. Cover the skillet and let it simmer until the chicken is cooked through, about 6 minutes.

Notes

Feel free to swap out panko breadcrumbs for regular breadcrumbs or use shredded cheese blends if preferred. Pounding chicken to an even thickness is crucial for tender results.
