15 Minute Spinach and Feta Omelet

A quick and nutritious omelet packed with protein, spinach, and feta cheese, perfect for busy mornings.

Ingredients

  • 2 large eggs
  • 1/4 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • ½ tablespoon butter (divided)
  • 1/2 cup baby spinach
  • ¼ cup crumbled feta cheese

Instructions

  1. In a small bowl, beat the eggs vigorously along with oregano, garlic powder, and a pinch of salt until well combined.
  2. Heat ¼ tablespoon of butter in a small 9-inch nonstick skillet over medium heat. Sauté baby spinach for 1-2 minutes until wilted, then set aside.
  3. Add the remaining butter to the skillet and swirl to coat the bottom.
  4. Pour the egg mixture into the skillet, cover, and cook for 1-2 minutes until the edges start to set.
  5. Sprinkle wilted spinach and feta cheese on one side. Cover and cook for another minute until the eggs are fully set.
  6. Fold the omelet in half and carefully slide it onto a plate for serving.

Notes

For a different flavor, swap feta with goat cheese or add your favorite herbs.
