  • 2 boneless skinless chicken breasts (about 56 ounces each) or 4 thin-sliced chicken breasts
  • 2 cups seasoned parmesan breadcrumbs
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil spray (non-aerosol)
  • Shredded parmesan cheese (for topping)
  • Lemon
  • Parsley
  • Red pepper flakes
  • Hot sauce

Instructions

  1. Begin by slicing each chicken breast in half lengthwise to get two thinner pieces.
  2. Pat the chicken dry with a clean towel to ensure the coating sticks.
  3. If your chicken is thick, pound it gently with a meat mallet for even cooking.
  4. In one shallow bowl, pour the seasoned breadcrumbs. In another, whisk together the eggs, salt, and pepper until blended.
  5. Dip each piece of chicken into the egg mixture, making sure it’s fully coated.
  6. Transfer each piece to the bowl with breadcrumbs, gently pressing to adhere the coating.
  7. Preheat your air fryer to 390°F (198°C) and spray the basket with olive oil to prevent sticking.
  8. Arrange the breaded chicken in a single layer in the air fryer basket and lightly spray the tops with olive oil.
  9. Cook for 6-7 minutes, then flip each piece. Spray the other side with olive oil and cook for an additional 4-5 minutes, or until the internal temperature reaches 165°F (75°C).
  10. Let the chicken rest for at least five minutes before slicing to retain its juices.
  11. Serve with a splash of lemon juice and additional salt and pepper to taste.

Notes

For extra flavor, consider marinating the chicken in lemon juice and herbs for a couple of hours before cooking.
