  • 2 large chicken breasts (boneless and skinless)
  • 1 zucchini (sliced into half-moons)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 cup broccoli florets
  • ½ red onion (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¾ teaspoon sea salt
  • ½ teaspoon black pepper
  • Fresh parsley or cilantro (chopped)
  • Lemon wedges (for serving)

Instructions

  1. Trim any excess fat from the chicken breasts and pat them dry with a paper towel.
  2. In a mixing bowl, rub the chicken with olive oil, garlic powder, paprika, oregano, thyme, sea salt, and black pepper until fully coated.
  3. In another bowl, toss the zucchini, red and yellow bell peppers, broccoli, and red onion with the remaining olive oil, salt, and pepper.
  4. Set your air fryer to 380°F (193°C) and preheat for 5 minutes.
  5. Place the seasoned chicken breasts in the air fryer basket and cook for 10 minutes.
  6. After 10 minutes, add the seasoned vegetables around the chicken and cook for another 8-10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Ensure the chicken and vegetables are well-cooked and tender.
  8. Allow the chicken to rest for a few minutes before serving. Garnish with fresh parsley or cilantro and serve with lemon wedges.

Notes

For extra juiciness, marinate the chicken in the seasoning for 30 minutes before cooking. Store leftovers in an airtight container for up to 4 days.
