1.5 lbs boneless, skinless chicken thighs
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup packed brown sugar
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon ground ginger
Pinch of red pepper flakes (optional)
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
Instructions
Pat the chicken thighs dry with paper towels and lightly season them with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs and sear for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
Lower heat to medium, add minced garlic to the same skillet, and sauté for about 30 seconds until fragrant.
In a bowl, whisk together brown sugar, soy sauce, apple cider vinegar, Worcestershire sauce, ground ginger, and optional red pepper flakes. Pour the mixture into the skillet and bring to a simmer.
Return seared chicken thighs to the skillet, spooning the sauce over them. Simmer for 8-10 minutes until chicken reaches an internal temperature of 165°F (75°C).
Stir in the cornstarch slurry and cook for an additional 1-2 minutes until the sauce thickens beautifully.
Serve the chicken hot, generously coated in the glaze.
