A comforting, cheesy baked chicken dish that combines crispy chicken breasts with marinara sauce and gooey mozzarella.

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts horizontally to create thinner cutlets.
  3. Set up three shallow dishes: fill one with flour, beat the eggs in the second, and mix breadcrumbs, Parmesan, garlic powder, salt, and pepper in the third.
  4. Dredge each chicken cutlet in flour, dip it in the egg, then coat it in the breadcrumb mixture.
  5. Drizzle olive oil on a parchment-lined baking sheet and place the coated chicken on it.
  6. Bake for 15 minutes or until golden.
  7. Flip the chicken, spoon marinara sauce on top, and sprinkle with mozzarella cheese.
  8. Bake for another 10-15 minutes until cooked through and the cheese is melty and bubbly.
  9. Garnish with fresh basil, if desired.

Notes

To achieve a perfectly crispy coating, pat the chicken cutlets dry before coating. Feel free to experiment with spices in the breadcrumb mixture.
