Delightful pancakes infused with grated apples and yogurt, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
  2. In another bowl, mix the yogurt, milk, egg, sugar, and vegetable oil until smooth and well-blended.
  3. Gently fold the grated apple into the wet mixture, ensuring it’s evenly distributed.
  4. Gradually combine the wet ingredients with the dry ingredients. Stir just until mixed; it’s perfectly fine if there are a few lumps.
  5. Preheat a non-stick skillet over medium heat and lightly grease it with oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
  8. Keep the pancakes warm under a towel while you finish cooking the remaining batter.

Notes

Serve with powdered sugar, maple syrup, or whipped cream. Can be stored in the refrigerator for up to 3 days.
