Fluffy pancakes infused with fresh apples and creamy yogurt, perfect for a delightful breakfast.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. Whisk together the flour, baking powder, cinnamon, and salt in a large mixing bowl.
  2. Mix yogurt, milk, egg, sugar, and oil in a separate bowl until smooth.
  3. Fold in the grated apple gently into your wet mixture.
  4. Combine wet and dry ingredients gradually; stir until just combined.
  5. Preheat a non-stick skillet over medium heat, lightly greased with vegetable oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form, about 2-3 minutes.
  7. Flip pancakes and cook for another 2-3 minutes until golden brown.
  8. Keep pancakes warm under a kitchen towel while cooking the remaining batter.

Notes

Serve warm with maple syrup or honey, topped with yogurt or fresh fruit. Store leftovers in an airtight container in the refrigerator for 2-3 days or freeze for up to a month.
