A refreshing and healthy Avocado Chicken Salad, perfect for lunches or light dinners.

Ingredients

  • 2 ripe avocados
  • 2 cups shredded cooked chicken
  • 1 cup diced bell peppers
  • 1 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Mash the ripe avocados in a large bowl until smooth and creamy.
  2. Add the shredded cooked chicken, diced bell peppers, diced cucumber, and finely chopped red onion.
  3. Squeeze the juice of 2 limes and season with salt and pepper to taste.
  4. Gently stir everything together until well combined.
  5. Optional: Sprinkle fresh cilantro on top for added flavor.
  6. Serve in wraps, on toast, or over a bed of greens.
