A quick and delicious avocado toast topped with fresh tomatoes, basil, and mozzarella, perfect for brunch or a light dinner.

  • 4 thick slices of bread (multigrain, sourdough, or olive bread)
  • 2 avocados
  • 8 oz (225 g) tomatoes
  • 8 oz (225 g) fresh mozzarella
  • 2 tbsp chopped fresh basil
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt (or to taste)
  • 1/4 tsp ground black pepper (or to taste)

Instructions

  1. Chop the tomatoes, fresh basil, and mozzarella and place them in a mixing bowl.
  2. Add a sprinkle of kosher salt and ground black pepper, and mix gently to combine.
  3. Brush each slice of bread with extra-virgin olive oil on both sides.
  4. Toast the oiled bread slices in a skillet or grill pan over medium-high heat for about 2 minutes on each side until lightly browned and crisp.
  5. Evenly mash the avocados over each piece of toasted bread.
  6. Top the avocado with generous spoonfuls of the tomato, basil, and mozzarella mixture.
  7. Serve as a brunch centerpiece or alongside a fresh green salad.

Notes

For extra flavor, consider adding red pepper flakes or balsamic glaze on top. Serve with a refreshing drink like iced herbal tea.
