A delightful avocado toast topped with crispy bacon and a perfectly cooked egg, ideal for breakfast or brunch.

Ingredients

  • 2 slices of sturdy bread
  • 2 slices of crispy bacon
  • 2 eggs
  • 1 ripe avocado
  • Salt and pepper to taste
  • Optional: red pepper flakes, lemon juice

Instructions

  1. Heat a frying pan over medium heat. Add the bacon and cook until crispy. Once done, remove from the pan and let it drain on paper towels.
  2. In the same pan, crack the eggs and fry them according to your preference, seasoning with salt and pepper.
  3. While the eggs are cooking, toast the bread slices until golden brown.
  4. In a bowl, mash the ripe avocado with salt, pepper, and a squeeze of lemon juice if you’re using it.
  5. Spread the mashed avocado generously on each slice of toasted bread.
  6. Top each piece of toast with a fried egg and crispy bacon.
  7. Sprinkle some red pepper flakes on top before serving. Enjoy immediately!

Notes

Best served fresh, can be paired with a light salad or fresh fruit. When reheating, be aware that the avocado should be mashed fresh.
