Avocado Toast with Smoked Salmon

A delightful avocado toast topped with savory smoked salmon, perfect for breakfast or a light lunch.

Ingredients

  • 2 Avocados
  • 4 thick slices of bread (sourdough, multigrain, or olive bread)
  • 4 oz smoked salmon
  • 1/3 cup crème fraîche
  • 1 tbsp fresh lemon juice
  • Zest from one lemon
  • 1 tbsp chopped fresh dill
  • 2 spring onions/scallions, chopped
  • 2 tbsp capers (chopped)
  • 2 tbsp extra-virgin olive oil (for brushing the bread)
  • A pinch of kosher salt or sea salt flakes
  • A pinch of freshly ground black pepper

Instructions

  1. Brush both sides of each bread slice with extra-virgin olive oil.
  2. Grill the oiled bread in a skillet, grill pan, or cast-iron pan over medium-high heat for 2-3 minutes on each side until toasted and golden brown.
  3. In a bowl, whisk together the crème fraîche, lemon juice, lemon zest, chopped dill, spring onions, and chopped capers. Season with salt and pepper to taste.
  4. Mash the avocados in a separate bowl and spread generously over the warm, toasted bread.
  5. Drape the smoked salmon on top of the mashed avocado.
  6. Top each slice with a dollop of the lemon-capers-herb crème fraîche mixture.

Notes

Store leftovers separately for freshness. Consume mashed avocados immediately as they brown quickly.
