A warm, cheesy breakfast quesadilla filled with eggs, bacon, and cheese, perfect for any time of day.

Ingredients

  • 2 large eggs
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 2 strips of cooked bacon, chopped
  • 1 large flour tortilla
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together the eggs with a pinch of salt and pepper until well combined.
  2. Heat a skillet over medium heat and pour in the egg mixture. Cook, stirring occasionally, until the eggs are scrambled and fully cooked.
  3. On one half of the tortilla, layer the scrambled eggs, chopped bacon, and shredded cheese.
  4. Fold the tortilla in half, pressing down gently. In the skillet, add a small amount of butter or oil.
  5. Cook the quesadilla for about 2-3 minutes on each side, until golden brown and the cheese is melted.
  6. Remove from the skillet and cut into wedges. Serve warm.

Notes

Serve with fresh salsa, guacamole, or a dollop of sour cream. Pair with orange juice or a vanilla latte.
