  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease your donut pan.
  2. Boil the apple cider in a small saucepan until it reduces to about 1/2 cup, then set aside to cool.
  3. Whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl until well blended.
  4. In a separate bowl, mix the reduced apple cider, melted butter, eggs, and vanilla extract until smooth.
  5. Gently fold the wet mixture into the dry ingredients, stirring just until combined. Avoid overmixing.
  6. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  7. Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the donuts in the pan for a few minutes before transferring to a wire rack.
