Baked Breakfast Tacos are a delightful way to start your day, combining seasoned potatoes, fluffy scrambled eggs, crispy bacon, and melty cheese in warm tortillas.

Ingredients

  • 4 slices bacon
  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 1/2 tbsp taco seasoning mix
  • 8 soft corn tortillas (6 inch)
  • 8 eggs, well beaten
  • 1/2 cup shredded Monterey Jack cheese (2 oz)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with the bacon slices, and bake for about 10 minutes until crispy. Once cooked, chop the bacon into bits.
  3. Heat the canola oil in a large skillet over medium heat. Add the cubed potatoes and taco seasoning, cooking for about 15-20 minutes until tender.
  4. Arrange the corn tortillas upright in a 13×9-inch baking dish.
  5. Scramble the beaten eggs in another skillet over medium heat until slightly soft.
  6. Fill each tortilla with 1/4 cup of the seasoned potatoes. Top with scrambled eggs, chopped bacon, and a tablespoon of cheese.
  7. Bake in the oven for about 10 minutes until heated through and the cheese is melted. Serve immediately.

Notes

For a leaner option, substitute turkey bacon; for a spicy kick, use pepper jack cheese.
