A delightful twist on traditional tacos, packed with eggs, cheese, and fresh veggies, perfect for breakfast or brunch.

  • 8 small corn or flour tortillas
  • 6 large eggs
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked and crumbled breakfast sausage or bacon (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the diced bell peppers and onions until they’re softened, about 4-5 minutes.
  3. In a large bowl, whisk together the eggs, salt, and black pepper.
  4. If you’re adding sausage or bacon, mix it into the egg mixture along with the sautéed vegetables.
  5. Spoon the egg mixture evenly onto each tortilla and sprinkle with cheese.
  6. Arrange the filled tortillas on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes, until the eggs are set and the cheese is bubbling.
  8. Garnish with fresh cilantro, if desired, and serve warm.
