A classic dish that transforms chicken breasts into a cheesy, flavorful meal with marinara and mozzarella. Perfect for family gatherings and weeknight dinners.

  • 5 pounds chicken breast
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce
  • 1 cup whole wheat bread crumbs
  • ½ cup Parmesan cheese
  • ¼ teaspoon pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Begin by slicing the chicken breasts in half lengthwise. Place each piece between plastic wrap and pound them to about ¼ inch thick.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. In one bowl, add the whole wheat flour. In a second bowl, whisk the eggs. In a third bowl, mix the breadcrumbs, Parmesan cheese, pepper, basil, and parsley.
  4. Coat each chicken cutlet in flour, dip it into the egg mixture, and then dredge it in the breadcrumb mixture.
  5. Place the breaded chicken on the prepared baking sheet and bake for approximately 30 minutes, flipping halfway through.
  6. Once done, top each piece with marinara sauce and mozzarella. Broil for about 2 minutes until melted and bubbly.
  7. Serve your Baked Chicken Parmesan over pasta or alongside a fresh garden salad.
