A delightful dish combining creamy feta, fresh vegetables, and perfectly baked eggs, perfect for any meal of the day.

Ingredients

  • 200g feta cheese
  • 4 eggs
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, add the cherry tomatoes and drizzle them with olive oil.
  3. Crumble the feta cheese over the tomatoes. Bake for 15 minutes.
  4. Remove the dish from the oven and gently crack the eggs into the baking dish.
  5. Add the fresh spinach around the eggs.
  6. Season with salt and pepper.
  7. Return the dish to the oven and bake for an additional 10-12 minutes, or until the eggs are set to your liking.
  8. Garnish with fresh herbs and serve hot.

Notes

For a twist, swap the feta with goat cheese or add spices like smoked paprika.
