A delightful dish blending creamy feta, juicy tomatoes, and fresh spinach, perfect for brunch or weeknight dinners.

Ingredients

  • 2 eggs
  • 100g feta cheese
  • 1 cup cherry tomatoes
  • 1 cup fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place the cherry tomatoes at the bottom. Drizzle with olive oil and season with salt and pepper.
  3. Crumble the feta cheese evenly over the tomatoes.
  4. Bake for about 15 minutes, or until the tomatoes soften and the feta turns golden.
  5. Add fresh spinach and create two small wells. Crack an egg into each well.
  6. Return to the oven and bake for another 5-7 minutes, or until the eggs reach your desired doneness.
  7. Garnish with fresh herbs if you wish and serve warm.

Notes

For a different take, substitute feta with goat cheese or ricotta. Serve with crusty bread or avocado slices for the best experience.
