Healthy, delicious, and kid-approved Banana Oatmeal Bars that are perfect for breakfast or snacks.

Ingredients

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Stir in the honey (or maple syrup), peanut butter, and vanilla extract until well combined.
  4. Add in the rolled oats, cinnamon, and a pinch of salt, mixing thoroughly until fully incorporated.
  5. Pour the mixture into the prepared baking pan, spreading it evenly.
  6. Bake for 20-25 minutes, or until the edges start to turn golden.
  7. Cool the bars before cutting them into squares. Enjoy!
