Delicious and nutritious banana oatmeal muffins, perfect for breakfast or snacks, made with ripe bananas and hearty oats.

  • 1 cup rolled oats
  • 1/4 cup maple syrup (optional)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a mixing bowl until they are smooth and creamy.
  3. Combine the ingredients: Add rolled oats, maple syrup (if using), baking powder, baking soda, salt, milk, and vanilla extract. Stir until well-blended.
  4. Add your mix-ins: If you opt for chocolate chips or blueberries, gently fold them into the batter now.
  5. Fill the muffin tin: Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  6. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool: Let the muffins cool before serving.

Notes

Use overripe bananas for maximum sweetness. Don’t overmix the batter for a tender texture.
