Crispy, golden potatoes with savory bacon and a touch of maple syrup, perfect for brunch or as a side.

Ingredients

  • 4 medium golden potatoes (or sweet potatoes)
  • 2 tablespoons olive oil (or avocado oil)
  • 4 slices bacon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Old Bay seasoning
  • 2 cloves garlic (minced)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon parsley (or chives, chopped)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice the potatoes into bite-sized pieces.
  3. Boil the potatoes in a pot of salted water for about 10-12 minutes, until just tender, then drain.
  4. Heat olive oil in a skillet over medium-high heat. Add bacon and cook until crispy, then remove.
  5. Add par-cooked potatoes to the same skillet. Season with salt, pepper, and Old Bay seasoning. Sauté until golden and crispy, about 10-15 minutes.
  6. Stir in minced garlic and cook for an additional minute.
  7. Crumble the crispy bacon back into the skillet and mix everything together.
  8. Drizzle with maple syrup and toss lightly to combine.
  9. Remove from heat and garnish with chopped parsley or chives.

Notes

Serve with eggs and a side of toast. Store leftovers in an airtight container in the fridge for 3-4 days.
