Delicious and nutritious mini pancake bites packed with protein and berries, perfect for breakfast or a quick snack.

Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder
  • 1 cup cottage cheese (or Greek yogurt)
  • 2 eggs
  • 1/2 cup mixed berries (fresh or frozen)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Mix together the rolled oats, protein powder, cottage cheese, eggs, honey (if using), vanilla extract, baking powder, and salt until smooth.
  3. Fold in the mixed berries gently to keep them whole.
  4. Fill the muffin tin about two-thirds full with the batter.
  5. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  6. Cool slightly before removing from the tin and enjoy warm.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
