Quick and nutritious pancake bites packed with protein and bursting with berry flavor, perfect for busy mornings or family brunches.

Ingredients

  • 1/2 cup cottage cheese (or Greek yogurt for a swap)
  • 2 eggs
  • 1 cup berries (blueberries, raspberries, or strawberries)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Combine oats, cottage cheese, eggs, and honey (if desired) in a blender. Add baking powder, vanilla extract, and a pinch of salt, then blend until smooth.
  3. Fold in the berries carefully, ensuring they’re evenly distributed.
  4. Pour the batter into the muffin tin, filling each cup about two-thirds full.
  5. Bake for 15-20 minutes or until the tops are golden and a toothpick inserted comes out clean.
  6. Let cool slightly before removing from the tin, and enjoy!
