A comforting homemade chicken noodle soup perfect for warming hearts during winter.

  • 1 cup egg noodles
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté for about 5 minutes.
  3. Stir in garlic and thyme; cook for an additional minute.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add egg noodles and cook according to package instructions (about 7-8 minutes).
  6. Gently stir in shredded chicken, seasoning with salt and pepper to taste.
  7. Let the soup simmer for 5 minutes until heated through.
  8. Serve hot in bowls, garnished with fresh parsley.
