A refreshing and vibrant chickpea salad packed with crunchy vegetables and zesty flavors, perfect for warm days and meal prep.

Ingredients

  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, diced
  • 1/4 cup fresh parsley, chopped

Instructions
