A refreshing and nutritious chicken salad packed with flavors and textures, perfect for any occasion.

Ingredients

  • 2.5 cups cooked, diced or shredded chicken
  • 3 stalks of celery (about 1/2 cup diced)
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 12 teaspoons fresh lemon zest
  • Salt and pepper (to taste)

Instructions

  1. Prepare the grapes: Soak the grapes in a bowl of water mixed with 1 teaspoon of baking soda for about 5 minutes. Rinse well and pat dry before slicing.
  2. Mix it up: In a medium-sized bowl, combine the sliced grapes, diced chicken, chopped celery, walnuts, and red onion. Toss gently to mix.
  3. Create the dressing: In a separate small bowl, whisk together Greek yogurt, mayo, Dijon mustard, lemon juice, and lemon zest. Season with salt and pepper to your liking.
  4. Combine: Pour the dressing over the chicken and grape mixture. Toss everything gently until fully coated.
  5. Serve or chill: Serve the salad immediately or refrigerate for a few hours to allow the flavors to meld beautifully.

Notes

For an even lighter option, swap mayo for additional Greek yogurt. Store in an airtight container for up to 3 days, storing celery and pecans separately to maintain crunch.
