Biscuits and Chorizo Gravy

A comforting dish of flaky biscuits smothered in rich, spicy chorizo gravy.

Ingredients

  • 10 biscuits
  • 2 (9-ounce) tubes Cacique pork chorizo
  • 1/2 medium white or yellow onion, finely diced
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Prepare the biscuits according to the package instructions or your favorite homemade recipe.
  2. Heat a large sauté pan or skillet over medium-high heat.
  3. Add the chorizo to the hot skillet, breaking it apart with a spatula. Cook for about 5 minutes until nicely browned.
  4. Once browned, add the finely diced onion and continue cooking for an additional 2 minutes, stirring occasionally.
  5. Sprinkle the flour over the chorizo mixture and stir well for about a minute until combined.
  6. Gradually lower the heat to medium-low, then pour in the milk. Allow the mixture to simmer, stirring frequently for 5-7 minutes until it thickens to your liking.
  7. Generously ladle the chorizo gravy over the warm biscuits, and season with salt and pepper to taste. Serve immediately.

Notes

Serve warm with scrambled eggs or fresh fruit for a balanced meal.
