2 (9-ounce) tubes Cacique pork chorizo
1/2 medium white or yellow onion, finely diced
3 tablespoons all-purpose flour
2 1/2 cups whole milk
Salt and pepper to taste
Instructions
Prepare the biscuits according to the package instructions or your favorite homemade recipe.
Heat a large sauté pan or skillet over medium-high heat.
Add the chorizo to the hot skillet, breaking it apart with a spatula. Cook for about 5 minutes until nicely browned.
Once browned, add the finely diced onion and continue cooking for an additional 2 minutes, stirring occasionally.
Sprinkle the flour over the chorizo mixture and stir well for about a minute until combined.
Gradually lower the heat to medium-low, then pour in the milk. Allow the mixture to simmer, stirring frequently for 5-7 minutes until it thickens to your liking.
Generously ladle the chorizo gravy over the warm biscuits, and season with salt and pepper to taste. Serve immediately.
