A comforting casserole that combines tender biscuits, rich sausage gravy, and fluffy eggs, perfect for brunch or family gatherings.

  • 1 (16 oz) can refrigerated buttermilk biscuits (8-count)
  • 1 lb breakfast sausage (pork or turkey)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk (for gravy)
  • 6 large eggs
  • 1/2 cup milk (for eggs)
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9 x 13-inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, cook the sausage until browned and fully cooked.
  3. Sprinkle the flour over the sausage, stirring well to coat.
  4. Gradually add in 2 1/2 cups of milk while stirring continuously. Let it simmer for about 5–7 minutes until the mixture thickens.
  5. Season with salt and pepper, then remove from the heat.
  6. Cut each biscuit into quarters and scatter them across the bottom of the prepared baking dish.
  7. Pour the sausage gravy evenly over the biscuits.
  8. In a separate bowl, whisk together the eggs, 1/2 cup of milk, and a pinch of salt and pepper. If using cheese, mix it in now.
  9. Pour the egg mixture evenly over the casserole.
  10. Bake uncovered for 35–40 minutes, or until the eggs are set and the biscuits are cooked through. The top should be golden and bubbly.
  11. Allow the casserole to rest for 5–10 minutes before slicing and serving.

Notes

Serve warm with a fresh fruit salad or crispy hash browns. Store leftovers in an airtight container for up to 3 days.
