These mini muffins are a delightful, bite-sized twist on traditional pancakes, perfect for any occasion.

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a second bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Fill each mini muffin cup about two-thirds full with the batter.
  6. Bake for 10-12 minutes, or until tops are golden brown and a toothpick comes out clean.
  7. Allow the muffins to cool slightly in the tin before removing them.
