A hearty and comforting baked oatmeal with blueberries, perfect for breakfast or brunch.

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or dairy-free alternative)
  • 1/3 cup maple syrup (or honey)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 1/2 cups blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, baking powder, and salt. Stir until well mixed.
  3. In another bowl, whisk together the milk, maple syrup, eggs, vanilla extract, and cinnamon until smooth.
  4. Pour the wet mixture into the dry ingredients. Gently stir until just combined; avoid overmixing.
  5. Carefully fold in the blueberries, taking care not to squish them.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 30-35 minutes, or until the top is golden and set.
  8. Allow to cool slightly before serving.

Notes

Serve warm with a drizzle of maple syrup or a dollop of yogurt. Store leftovers in an airtight container in the refrigerator for up to 4 days.
