A delightful and quick breakfast option that combines creamy ricotta, juicy blueberries, and a hint of cinnamon, all wrapped in crispy tortillas.

  • 2 tortillas
  • 1 cup blueberries
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon cinnamon
  • 1 tablespoon honey (optional)
  • Butter or oil for cooking

Instructions

  1. Combine the ricotta cheese, blueberries, and cinnamon in a bowl. If you like a sweeter flavor, drizzle in the honey.
  2. Heat a non-stick pan over medium heat and add about a teaspoon of butter or oil.
  3. Place one tortilla in the pan and spread the blueberry mixture evenly over it.
  4. Top it with the second tortilla.
  5. Cook until the bottom is golden brown, about 3-4 minutes.
  6. Carefully flip the quesadilla and cook the other side until it’s also golden and crisp.
  7. Remove from the pan, slice into wedges, and enjoy warm.

Notes

For extra flavor, consider adding a pinch of salt to the blueberries or a touch of vanilla extract in the ricotta. Store leftovers in an airtight container for up to 3 days.
