A nutritious and delicious breakfast bake combining creamy cottage cheese and sweet blueberries, perfect for starting your day off right.

Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh or frozen blueberries
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract in a large bowl, mixing until smooth.
  3. Add the rolled oats, baking powder, cinnamon, and a pinch of salt, stirring gently to combine.
  4. Fold in the blueberries carefully to keep them intact.
  5. Pour the mixture into the greased baking dish, spreading it out evenly.
  6. Bake for 30-35 minutes, or until the center is set and the top is lightly golden.
  7. Allow to cool for a few minutes before slicing and enjoying warm.
