A wholesome and easy breakfast bake featuring cottage cheese, rolled oats, and blueberries, perfect for busy mornings or a leisurely brunch.

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 cup fresh or frozen blueberries
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Add the cottage cheese, rolled oats, blueberries, eggs, milk, honey (or maple syrup), vanilla extract, baking powder, and salt in a large mixing bowl.
  3. Mix everything well until fully combined.
  4. Pour the mixture into a greased baking dish, ensuring it’s evenly spread out.
  5. Bake for 25-30 minutes. You’ll know it’s ready when the top is golden brown and set.
  6. Allow it to cool slightly, then cut into squares and serve warm.

Notes

Top with Greek yogurt, extra honey, sliced bananas, or nuts for added flavor. Leftovers can be stored in an airtight container for up to 5 days.
