A delightful twist on traditional breakfast bakes, this casserole combines flakey croissants, creamy warmth, and juicy bursts of fresh blueberries.

  • 4 croissants, torn into pieces
  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 6 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: blueberry sauce for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, milk, sugar, vanilla extract, and salt until fully combined.
  3. Add the torn croissants to the egg mixture, making sure they are thoroughly soaked.
  4. Loosen the softened cream cheese for easy spreading in a separate bowl.
  5. Grease a baking dish and layer the soaked croissant pieces evenly in it.
  6. Spoon the blueberry cream cheese mixture over the croissant layer, then sprinkle the fresh blueberries on top.
  7. Bake in the preheated oven for 30-35 minutes until golden and set.
  8. Allow to cool slightly before serving. Serve warm, drizzled with optional blueberry sauce.

Notes

Make sure cream cheese is softened for blending. Can be frozen for up to two months.
