These Blueberry Greek Yogurt Bites are a refreshing snack combining creamy Greek yogurt with sweet blueberry compote, perfect for warm days or post-workout.

Ingredients

  • 1½ cups plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¾ cup fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5-6 minutes, stirring frequently until the berries soften and release their juices. Lightly mash them until you have a jam-like consistency. Allow the compote to cool.
  2. Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth. Feel free to adjust the sweetness to your liking.
  3. Assemble the Bites: Spoon 1 tablespoon of yogurt into each cavity of a mini muffin tray. Top with ½ teaspoon of blueberry compote and swirl gently with a toothpick to marbling the two together.
  4. Freeze: Lay the tray flat in the freezer for at least 120 minutes, or until the bites are solid.
  5. Serve & Store: Carefully pop the bites out of the tray and place them in an airtight container in the freezer. They are best thawed for 2-4 minutes before indulging.

Store in an airtight container in the freezer for up to 2 months. Thaw before serving or enjoy semi-frozen.
