Blueberry Jam Protein Baked Oats

A delightful and healthy breakfast option combining creamy protein-rich oats with sweet blueberry jam.

Ingredients

  • ¼ cup rolled old fashioned oats
  • ⅓ cup plain nonfat Greek yogurt
  • ⅓ cup unsweetened vanilla almond milk
  • 3 tbsp liquid egg whites
  • 15 g vanilla protein powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp baking powder
  • ½ cup frozen blueberries
  • ½ tsp vanilla extract
  • 1 tsp Swerve
  • Mixture of granular and brown Swerve

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray a 10 oz. ramekin with nonstick spray.
  3. In a small blender, combine the rolled oats, Greek yogurt, almond milk, egg whites, protein powder, salt, cinnamon, and baking powder. Blend until smooth and set aside.
  4. In a small saucepan over medium heat, combine the frozen blueberries, lemon juice, vanilla extract, and Swerve. Smash the blueberries while stirring until bubbling, then remove from heat.
  5. Pour the oat batter into the greased ramekin.
  6. Carefully spoon the blueberry filling into the center of the oat batter.
  7. Bake for 25-30 minutes, aiming for 25 minutes for a gooier texture.
  8. Once baked, sprinkle a mixture of granular and brown Swerve on top.
  9. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave when ready to enjoy.
