  • Zest of 1/2 lemon
  • 1/2 cup dairy-free yogurt

  • 1/2 tsp baking powder
  • 2 tsp vanilla
  • Dash of salt
  • 1/2 cup blueberries (fresh or frozen)

Instructions

  1. Combine the banana, oats, cashew butter, maple syrup, lemon juice, lemon zest, yogurt, milk, baking powder, vanilla, and a dash of salt in a blender. Blend until smooth.
  2. Gently fold in the blueberries, ensuring they remain whole.
  3. Pour the batter evenly into two oven-safe bowls.
  4. Preheat the oven to 350°F (175°C) and bake for about 25 minutes, adjusting time for desired creaminess.

Notes
