  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for heat)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine olive oil, apple cider vinegar, minced garlic, smoked paprika, brown sugar, salt, black pepper, and optional cayenne pepper to create a rich marinade.
  2. Add the chicken thighs to the bowl, ensuring they are well-coated in the marinade. Let sit for at least 30 minutes at room temperature or up to 4 hours in the refrigerator for enhanced flavor.
  3. Preheat your oven to 425°F (220°C).
  4. Place the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper.
  5. Roast the chicken for 35-40 minutes, or until the skin turns golden and crispy, and the internal temperature reaches 165°F (74°C).
  6. Garnish your chicken with chopped parsley before serving.

Notes

For maximum flavor, marinate your chicken thighs overnight if possible. Adjust cooking time for boneless thighs to about 20-25 minutes.
