A delightful twist on classic French toast, this dish features thick slices of brioche stuffed with a creamy bacon filling, pan-fried to golden perfection, and drizzled with bourbon-infused maple syrup.

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F. Place a wire rack over a baking tray.
  2. Arrange the bacon slices on the wire rack and bake for about 15 minutes or until crispy. Transfer to paper towels to cool, then finely chop.
  3. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  4. In a separate small bowl, mix the softened cream cheese with the chopped bacon until smooth.
  5. Cut a pocket into each slice of bread using a sharp knife. Stuff each slice generously with the bacon-cream cheese mixture.
  6. Coat each stuffed slice in the egg custard mixture, ensuring it’s well covered on all sides.
  7. In a large non-stick skillet, melt the butter over medium heat. Fry each stuffed slice for 3 to 4 minutes per side until golden brown and crisp.
  8. In a small saucepan, gently warm the maple syrup, bourbon, vanilla extract, and a pinch of salt over low heat for about 2 minutes.
  9. Plate the French toast and drizzle generously with the warm maple bourbon glaze. Enjoy!
