This ultimate morning treat combines the hearty flavors of a breakfast burrito with the gooey goodness of grilled cheese.

  • 6 large eggs
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • Sea salt & pepper (to taste)
  • 4 large tortillas (warmed)
  • 2 cups potatoes (roasted or pan-fried)
  • 1 cup cheddar cheese (grated)
  • 1 cup breakfast sausage (cooked and cut into pieces)
  • Sour cream
  • Salsa

Instructions

  1. Begin by melting the butter in a skillet over medium heat.
  2. Whisk together the eggs, garlic powder, cayenne pepper, sea salt, and pepper in a bowl. Pour the mixture into the skillet. Stir gently and cook until the eggs are fluffy and fully set.
  3. Lay a warmed tortilla flat on your work surface.
  4. In the center of the tortilla, place ½ cup of scrambled eggs, followed by ½ cup of golden potatoes. Then, add a sprinkle of ¼ cup of cheddar cheese.
  5. Include ¼ cup of cooked breakfast sausage pieces for an extra punch of flavor.
  6. Roll the tortilla tightly, tucking in the sides to secure the fillings.
  7. Heat the skillet again with a little butter or oil. Cook the rolled burrito until both sides are golden brown. Alternatively, you can bake it at 350°F (175°C) for about 10 minutes.
  8. Serve your delicious creation immediately, accompanied by sour cream and salsa for a tasty dip.
