Ingredients

  • 4 large eggs
  • 1 cup cooked lean meat (such as turkey or chicken sausage)
  • 1/2 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Salsa (optional)

Instructions

  1. Heat a skillet over medium heat. Add the diced bell peppers and onions, sautéing until soft.
  2. Whisk the eggs in a bowl and pour them into the skillet. Stir occasionally until scrambled and cooked through.
  3. Mix in the cooked meat and cheese, stirring until fully combined and melted.
  4. Warm the tortillas in a separate pan until pliable.
  5. Spoon the egg mixture into the center of each tortilla. Carefully roll them up, folding in the sides for a secure filling.
  6. Serve the burritos warm, with salsa if desired, or let them cool for later freezing.
