Delicious breakfast burritos filled with savory sausage, fluffy scrambled eggs, and colorful veggies, perfect for any morning.

Ingredients

  • 1 lb sausage
  • 6 eggs
  • 1 cup bell peppers, chopped
  • 1 cup spinach, chopped
  • 1 cup cheese (cheddar or your choice)
  • 4 large tortillas
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Heat a skillet over medium heat. Add the sausage and cook until browned and fully cooked, breaking it apart as it cooks.
  2. Toss in the chopped bell peppers and spinach. Sauté until the veggies are tender, about 3-4 minutes.
  3. In a separate bowl, whisk the eggs with a dash of salt and pepper. Pour the mixture into the skillet and scramble everything together until the eggs are fully cooked.
  4. Take a large tortilla and add a generous scoop of the egg mixture followed by a sprinkle of cheese.
  5. Roll the tortilla tightly, ensuring the filling is secure.
  6. Optional: Add a little olive oil to the skillet and toast the burrito on each side for about 2-3 minutes until it’s golden brown.
  7. Serve warm, or wrap in foil and freeze for later enjoyment.

Notes

Wrap leftovers in foil or an airtight container. They can be stored in the fridge for 3-4 days or frozen for up to 3 months.
