A flavorful and easy-to-prepare breakfast casserole featuring pork sausage, eggs, bell peppers, and cheddar cheese. Perfect for family gatherings or brunch.

  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and generously spray a 9×13-inch pan with cooking spray.
  2. Whisk together the eggs, sour cream, milk, shredded cheddar cheese, kosher salt, and black pepper in a large bowl until just combined.
  3. Heat a skillet over medium heat. Add the pork sausage, cooking until browned and crumbly. Drain any excess grease and stir the cooked sausage into the egg mixture.
  4. Sauté the diced green and red bell peppers along with the chopped green onions for about 2-3 minutes until slightly softened. Fold this vegetable mix into the egg and sausage combination.
  5. Pour the entire mixture into the greased pan, spreading it evenly. Bake for 35-50 minutes, or until the edges are set and the center has a slight jiggle.
  6. Allow the casserole to cool for a few minutes before slicing and serving.

Notes

Slice and serve with fresh fruit or a side salad. Add hot sauce or salsa for extra flavor.
