A delightful breakfast sandwich featuring flaky croissants, creamy eggs, and rich cheddar, perfect for any morning occasion.

Ingredients

  • 2 large croissants
  • 2 large eggs
  • 2 slices cheddar cheese
  • 2 slices cooked bacon
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a skillet over medium heat for about 1-2 minutes.
  3. Crack and whisk the eggs in a small bowl until well combined.
  4. Melt butter in the skillet, then pour in the eggs. Cook without stirring for 1-2 minutes.
  5. Once set, sprinkle with salt and pepper, and gently fold the eggs.
  6. Remove the cooked eggs from the skillet.
  7. Slice the croissants in half and warm them in the oven for about 5 minutes.
  8. On the bottom half of each croissant, spread mayonnaise. On the top half, slather on some Dijon mustard.
  9. Layer a slice of cheddar cheese, bacon, and the cooked eggs onto the bottom half.
  10. Press the top croissant half onto the sandwich and serve immediately.

Notes

Feel free to swap the cheddar for your favorite cheese or the bacon for turkey or veggie bacon if you’re looking for alternatives. For an extra kick, add hot sauce!
