A delightful twist on classic breakfast, featuring savory sausage, crispy potatoes, and creamy cheese wrapped in flour tortillas.

  • 4 Flour tortillas
  • 1 lb Sausage
  • 2 cups Potatoes, diced
  • 1 cup Cheese, shredded
  • 4 Eggs
  • 1/2 cup Cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the sausage and potatoes together over medium heat until they are fully cooked and crispy.
  3. In a separate bowl, whisk together the eggs and cream until smooth and well combined.
  4. Lay a flour tortilla flat on a clean surface. Take a portion of the sausage and potato mixture and place it in the center; sprinkle with cheese. Roll it up tightly to encase the filling.
  5. Arrange the filled tortillas seam-side down in a greased baking dish.
  6. Pour the egg mixture evenly over the top of the rolled tortillas, ensuring they’re fully coated.
  7. Bake for 25-30 minutes until the eggs are set and the top is golden brown.
  8. Serve warm, and enjoy!

Notes

Best served with avocado slices, salsa, or sour cream. Great for meal prep and can be stored in the refrigerator for up to 3 days.
