A comforting and cozy breakfast-for-dinner recipe featuring fluffy omelets, a hearty casserole, and delicious pancakes.

  • 8 large Eggs
  • 1 cup diced Ham
  • 1 cup shredded Cheese
  • 2 cups diced Potatoes
  • 1 cup crumbled Sausage
  • 4 slices of Bread
  • 1 cup Pancake mix
  • 1 cup Milk
  • 2 tablespoons Butter
  • 1 cup chopped Vegetables (like peppers and onions)

Instructions

  1. Beat the eggs until well mixed. Heat a skillet over medium-high heat. Pour in the eggs and sprinkle with cheese and diced ham. Cook until set, then fold in half and remove from heat.
  2. Layer beaten eggs, chopped potatoes, crumbled sausage, and shredded cheese in a baking dish. Bake in a preheated oven for 25-30 minutes, or until firm and golden.
  3. Mix pancake mix with milk in a bowl until smooth. Pour a ladleful onto a hot griddle. Wait for bubbles to form, then flip and cook until both sides are golden brown.
  4. Plate your creations and let everyone choose their favorite toppings—syrup, fresh fruit, or whipped cream are all excellent choices!

Notes

Use a non-stick skillet for omelets. Prepare the casserole the night before for easy baking.
