A delightful breakfast-for-dinner recipe combining fluffy pancakes, creamy scrambled eggs, and crispy bacon or sausage.

Ingredients

  • Pancake mix (or homemade)
  • Eggs
  • Milk
  • Bacon or sausage
  • Maple syrup
  • Fresh fruit (such as berries or bananas)
  • Butter
  • Optional toppings: whipped cream, nuts, or chocolate chips

Instructions

  1. In a medium skillet over medium heat, cook your preferred protein—either bacon or sausage—until golden and crispy. Transfer it to paper towels to drain off excess fat.
  2. In a mixing bowl, whisk together pancake mix, milk, and eggs until just combined.
  3. Heat a non-stick skillet over medium heat, adding butter as needed. Pour in about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until both sides are golden brown.
  4. In the same skillet, add more butter if needed. Crack the eggs directly into the pan and stir gently until fluffy and creamy.
  5. Stack your pancakes on a plate, serve the scrambled eggs alongside, and add your crispy bacon or sausage. Adorn with fresh fruit and drizzle with maple syrup for that finishing touch.
