A comforting and savory breakfast fried rice that combines crisp bacon, fluffy eggs, and colorful vegetables, perfect for any meal of the day.

Ingredients

  • 2 cups cooked rice
  • 4 strips bacon, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • 1 tablespoon oil (for cooking)

Instructions

  1. Heat the oil in a large skillet or wok over medium heat.
  2. Add the diced bacon and cook until crispy. If you prefer less grease, drain the excess.
  3. Push the bacon to one side of the pan and pour in the beaten eggs. Scramble until fully cooked.
  4. Stir in the mixed vegetables and sauté for a few minutes until they become tender.
  5. Add the cooked rice and mix everything together until well combined.
  6. Drizzle soy sauce over the top and stir again to ensure even seasoning.
  7. Season with salt and pepper, then sprinkle with the chopped green onions for an added flavor boost.
  8. Cook for another couple of minutes, stirring frequently to keep everything warm.
